Halloween 2012

  I hope you have a spooky Halloween this year, I know we did! We went out downtown in Boulder, braved the below freezing temperatures and the obnoxious college crowds and still managed to have fun! I love Halloween and creating a costume, last year we were Tim Tebow and a Doctor, but this year I wanted to do a couples themed costume so we chose Mary Poppins and Bert, but we threw in a twist and became dead zombies and I painted skeleton makeup on our faces. What a huge hit! Here are some pictures of us and our friends.

Weekend Warrior

    As always our weekends are chock-full. Friday we had our friends Soley an Hugi over for a dinner party. This past spring they had a whole Elk processed and gave me a beautiful arm roast. I offered to save it and cook it up for all of us and we finally got around to doing that. I have cooked plenty of beef roasts before but never an elk. Being very lean meat, I had to be careful not to over cook it. Well it turned out superb and was medium rare and delicious! So thank you guys for that! We also introduced Hugi to Bob Ross and his "Happy Little Trees" LOL!
   On Saturday I met my friend Jessica for a horse back ride at Hall Ranch. What amazing weather we had! She brought us lunch from a little place called St. Vrains Market and we ate in this grassy meadow surrounded by white tail deer resting under the trees with an outstanding view of Long's Peak. Jess is from California and is a pretty recent transplant to Colorado. We both agreed on how remarkable Colorado is and how lucky we are to live here.
   Today we are having a "Halloween Night". Our friends Nina & Paul are coming over to watch classic scary movies and I have a whole Monster Feast prepared. I'll post those pictures in a later blog. I'll conclude with some pictures from this weekend and also one from a hike I did with Giselle to the pumpkin fields earlier in the week!

A Good Life

   Today I found out that my Great Uncle Ashby passed away. He was 90 years old and had been married to his sweetheart Clayda, my grandfather's sister, for 65 years! Isn't that amazing?! I hope to have such a long happy life myself. Last summer we had a long overdue family reunion where Arni also got to meet the matriarch and patriarch of the family. This is a picture of them and us.

   As promised I will post a few pictures from my October trip back home to Florida. This is only a select few, as now that I am an active blogger again I find I take a zillion pictures of things that I "can share on my blog". So here ya go!

Just a few sample pictures from my trip. I had a very good stay and want to say Thank You to all my friends and family who housed me, fed me, and spent time entertaining me. I look forward to repaying you when you visit me! I do love it here in the Rockies and this is home now, but I am grateful that I still have a place to go when I am missing subtropical deathly temperatures, humidity that makes me want to shower six times a day, bugs and rednecks. I KEED I KEED!!!! Seriously though, it's ALWAYS good to go home =)

You can never be overdressed or overeducated

Currently I am in Florida. I am having a great time and will post some pictures in a future blog. Before I get too behind on my blogging I thought I would post a few pictures from last weekend. Friday night we entertained some friends for an Icelandic dinner and games. Erin, our friend, was actually born in Iceland. She was born on the American naval base in Keflavík back in the 80s. She does not remember much of her time in Iceland but her parents like to tell her many stories of their time on the Rock. So we decided to treat her and her husband to a little reminder with food, alcohol and music from my Viking's homeland. They brought a game called catch phase and boy what fun that was! We laughed and the wine flowed until late into the night. It is so refreshing to find a couple who likes to laugh and you can tell that they genuinely like to be in each other's company. I had to give Erin her departure pineapple (apparently a thing they do in New Orleans when it's time for someone to leave, place a pineapple on the table). Obviously it was a joke and I got a funny picture out of it!

  In Denver this past weekend was an Icelandic festival. It was put on by Icelandair since there is now a direct flight to and from Iceland. The only part we attended was an Icelandic dinner at a place called Coohills. It was called Taste of Iceland, a four-day cultural festival showcasing the island nation’s food, music and film. Dinner was AH-MAZING and all the ingredients were shipped in fresh from Iceland and prepared by famous chef
Hákon Már Örvarsson (click highlighted for more info on him). We got together with our Icelandic friends and had a smashing time. We were even visited by the chef himself who thanked us for coming in and of course we showered him with genuine compliments on tye spread he prepared. As I conclude this post I'd like to reflect on my time here in Florida, where I was born and raised, and my current home in Colorado. There are certainly things I do appreciate and miss about "home" but the longer I am away the more Colorado is my home now. Everything about Colorado suites our lifestyle and Florida or the south in general for that matter seems very foreign to me. I'm sure I will come to terms with this and be able to appreciate Florida for what it is. Until then I think everyone should come visit me! :-)
