Taste of Iceland 2013

     Friday night we attended Taste of Iceland at Coohills in Denver. We also attended last year, you can read about that adventure HERE . This year, if you ask me, was superior to last year! The food was to die for and the ingredients were so fresh and original to the Icelandic cuisine. The chef was Þráinn Freyr Vigfússon who is also the head chef at Blue Lagoon in Iceland. He came out to serve a dessert of Skyr ice cream, peanut blueberry mousse, spicy crumble, lemon thyme marshmallows, and wild blueberries. What an amazing combination! Árni begin speaking to him in Icelandic and he stayed and spoke with us a while, he even asked (in Icelandic) if I was from Iceland. I actually understood that question so I answered in Icelandic "No I am not, but thank you dearly for the food" It's the best I could manage, but hey it's better than I used to be! We invited our foodie friends Nina and Paul, and they also agreed it was sensational.

   





     Saturday, Caitlyn, Nina and I had a girls brunch and a cookie decorating party in honor of the arrival of fall! The weather these past few days has been resplendent. Cool and crisp, the leaves are changing into rich golds and reds, and the skies are stunningly blue, highlighting the recent snow capped mountains. This also means I can wear my boots and sweaters again and drink thousands of pumpkin spiced lattes! 
     






     Finally today, Caitlyn, Johan, Árni and I packed a Scandinavian lunch and loaded up the bikes and horses and headed for a trail ride! Caitlyn and I galloped giddily along the trails on our ponies and the boys hit the road on their bikes and binoculars to do some bird watching. Unfortunately about halfway through Johan got a flat tire so we caught up with them to give him a ride back. We had a charming lunch of traditional Swedish potato salad, smoked Icelandic trout, cheese, chocolate and beer! The horses munched on hay in the shade and we kicked back to enjoy the food and listen to the Broncos game.
